Buying Matcha on an Ongoing Basis

A one-off purchase and a continuing supply relationship raise different questions.

Will the flavour hold

Matcha is agricultural — harvest year, field, and cultivar all shift it.

Foodservice products are generally formulated to hold a profile through blending. That is not the same as identical.

Ask how much variation to expect when a lot changes.

Assume prices move

Japan's 2025 green tea exports came to roughly ¥72.1 billion in value, close to double the prior year, on 12,612 tonnes, about 1.4 times. Value outpacing volume means unit prices rose.

Tight raw material conditions reach purchase prices.

Menu pricing set at the margin cannot absorb that. Some headroom is necessary.

Supply can stop

Tencha does not scale quickly.

Plants take years to establish, shading requires labour, stone mills manage roughly 40 g per hour. Those constraints do not resolve in the short term.

Knowing an alternative has value — with the caveat that switching changes the flavour, so understand the gap beforehand.

Order timing

Ordering after stock runs out means suspending the item during lead time.

Work back from minimum order and delivery time to set a reorder point. At the same time, avoid holding more than the post-opening window supports.

Those two constraints conflict, which is why package size has to match turnover.

Confirm information access

Ingredients, allergens, origin. If a customer asks, you need an answer.

Check before the relationship starts whether specification sheets are provided and whether questions get answered.

Keep records

Lot number, opening date, impressions of the flavour.

Even brief notes let you trace what changed when the taste shifts.
