L-theanine is the savory amino acid, at 0.5 to 3 percent of dry leaf weight.

Why the theanine is there

Theanine forms in the roots and moves to the leaves. Sunlight converts it into astringent catechins.

Shaded cultivation prevents that — covers over the field while shoots develop, light managed to harvest. Weeks of labour and materials.

So "mellow and slightly sweet" has cultivation behind it.

Finer particles

Fine matcha reaches 1 to 5 microns. Typical powdered tea runs 20 to 50; wheat flour 30 to 60.

Matcha does not dissolve — particles suspend and reach the palate intact, so size translates directly into texture. Coarse is gritty, fine is smooth.

Stone mills turn slowly to avoid friction heat, managing roughly 40 g per hour.

More thorough sorting

Stems and veins are removed after drying. They are fibrous, will not mill down, and produce grittiness and off-flavours.

Thorough removal lowers yield.

Cultivar and harvest

Cultivars suited to shading are limited. Tencha comes mainly from first flush, grown on winter root reserves.

For some uses it does not matter

Drinking straight, these differences appear directly in texture and flavour.

Folded into a baked good, heat drives off aroma and shifts colour. Spending more does not guarantee a better result.

Deciding the application before selecting produces a purchase that matches the price.

Sugar leads the impression, so raw material differences recede.

Mixing stronger brings the tea character back out from behind the sweetness.
