Foodservice Grade Versus Retail

Foodservice Grade Versus Retail

Same category of product, different design priorities, because the use cases differ.

What foodservice demands

Fast dispersion Time between order and service is short. Mixing quickly and evenly matters more than anything else. Dextrin for flow, or granulation into larger particles that let water penetrate.

Consistency A restaurant's flavor cannot vary by the day. Matcha is an agricultural product and differs by harvest year and field, so blending multiple sources to hold a target profile is required.

Volume Kilogram units. Turnover is fast enough that post-opening deterioration is less of a concern.

Cost per serving Directly affects margin. Higher sugar ratios and blends combining matcha with powdered green tea are common.

What retail demands

Shelf life after opening Households take longer to finish a package. Smaller sizes, light-blocking materials, oxygen absorbers.

Shelf appeal The product has to be chosen in a store. Packaging design and the visible color of the powder influence that.

Legible labeling Some buyers read ingredient lists before purchasing, so a simpler formulation can be a selling point.

Buying foodservice for home use

Cheaper per gram, and 1 kg at 20 g per serving is 50 cups. Even daily, that takes close to two months.

Given a post-opening guideline of two weeks to a month, the latter portion gets consumed after flavor has declined.

Portioning into sealed containers helps, but every transfer risks condensation and moisture.

The actual criterion

Buy what you can finish in two weeks to a month. Price per gram is secondary to whether the tea is still good when you drink it.
